The Perfect Way to Serve Potatoes
This technique, inspired by classic salt-baking, produces potatoes with a wonderfully soft and fluffy interior by locking in steam. The sea salt bed, combined with aromatic herbs, gives the skin a rich, savory flavor.
Salt-Baked Potatoes Recipe
Ingredients:
| Ingredient | Amount |
|---|---|
| Large potatoes | 4 |
| Coarse sea salt | 2 cups |
| Olive oil | 1/4 cup |
| Garlic, chopped | 4 cloves |
| Fresh rosemary, chopped | 2 tablespoons |
| Fresh thyme, chopped | 2 tablespoons |
| Salt and black pepper | To taste |
| Sour cream | For serving |
| Fresh chives, finely chopped | For garnish |
Instructions:
Step 1: Preheat and Prep
Preheat your oven to 200°C (390°F). Wash the potatoes thoroughly and dry them completely with a paper towel.
Step 2: Make the Herb-Infused Salt
In a bowl, combine the coarse sea salt, chopped garlic, rosemary, and thyme. Mix well so the herbs are evenly distributed.
Step 3: Layer the Baking Dish
Spread half of the herb salt mixture evenly on the bottom of a baking dish. Arrange the potatoes on top of this salt layer.
Step 4: Season and Cover
Drizzle the olive oil over the potatoes and sprinkle with salt and pepper to taste. Cover the potatoes with the remaining herb salt mixture, making sure they’re fully coated.
Step 5: Bake
Place the dish in the oven and bake for 60–75 minutes, until the potatoes are tender and can be easily pierced with a fork or knife.
Step 6: Serve
Carefully remove the potatoes from the salt bed and let them cool slightly. Slice each potato lengthwise and top with a dollop of sour cream and a sprinkling of finely chopped chives.
